My signature vanilla cupcakes

Makes 12 cupcakes.

Ingredients:

150g baking butter

150g caster sugar

3 eggs

150g self-raising flour

a pinch of salt

1tsp vanilla extract

Method:

1. In a mixing bowl whisk together the butter and sugar.

2. After, well combined (light and fluffy), mix in the vanilla extract and egg.

3. Next, sift in the salt and flour and mix till the mixture becomes light and fluffy.

4. Spoon the mixture into the cupcake cases and bake for 30 mins at gas mark 4.
